On a medium skillet, add olive oil, then butter.
Sauté onions, spring onions and garlic.
Add the potatoes and cook until soft.
Add the broccoli and cook until tender.
Transfer to a mixing bowl and let cool.
Add cheese.
Roll into balls and flatten into patty cakes.
Pan-fry the patties the on the same skillet until golden brown.
Serve as a side dish, or eat on its own.
