Broccoli medallions

Ingredients

  • 1 Tbsp butter
  • 1 Tbsp olive oil
  • 1 onion, chopped finely
  • Bunch of spring onion, chopped finely
  • 1 large garlic clove
  • 100 grams broccoli, chopped
  • 1 cup grated cheese
  • 200 grams potato, cut in small cubes
  • Salt to taste

Instructions

  • On a medium skillet, add olive oil, then butter.
  • Sauté onions, spring onions and garlic.
  • Add the potatoes and cook until soft. 
  • Add the broccoli and cook until tender.
  • Transfer to a mixing bowl and let cool.
  • Add cheese.
  • Roll into balls and flatten into patty cakes.
  • Pan-fry the patties the on the same skillet until golden brown.
  • Serve as a side dish, or eat on its own.
