Restaurant Idalia brings exclusive menu to Balmori Chef’s Table

From signature sourdough focaccia with hummus to Iberico pork

A neighborhood go-to in Salcedo, Restaurant Idalia has gained a loyal following for its ever-evolving menu inspired by the seasons. From July 10 to 31, 2026, Chef Kevin David, who honed his craft under a Michelin-star chef in the US, takes over Balmori Chef’s Table with generous, hearty dishes designed to bring people together.

While the Salcedo, Makati, flagship has its own unique draw, Idalia at Balmori introduces an exclusive menu created solely for this pop-up. 

Sourdough Focaccia with Hummus

Start with one of Idalia’s signature favorites: the sourdough focaccia, baked to a crisp, golden crust and a light, airy crumb. Served with the restaurant’s silky house hummus, it’s a perfect pairing to begin the meal. 

Vongole

For pasta, not to be missed is the handmade vongole. Tossed with fermented chili, pangrattato, and fragrant garlic confit, it is flavor in layers with just the right amount of heat. 

Made for sharing, the Iberico Pork is one of Idalia’s signature entrées. Served with wood-fired roasted cabbage, a rich plum glaze, and velvety fermented cauliflower purée, it brings the kitchen’s open-fire cooking to the forefront. 

To end on a sweet note, Idalia serves desserts that showcase local ingredients, like the ube panna cotta with jackfruit and coconut. Guests can also complement their meal with a wide selection of artisanal cocktails and drinks.

A dedicated kids’ menu is also available to turn dining into a family experience.
