Truffle recipes you can follow

They need not be expensive, especially for one like me who can eat it every day

When dining out, I would order first thing off the menu is anything with black or white truffles. They’re not always expensive. Some time ago, Potato Corner even came up with truffle-flavored fries and I would order them every week. I figured you don’t need imported, high quality truffles all the time when you just want to satisfy that craving.

If you love truffles as much as I do, here are recipes that will not make you break the bank just to follow them.

What I use for everyday cooking:

  1. Mazza black truffle cream P842.00 for 500 grams (This is a big jar that can last you a while so I froze some of it until the next use.)

  2. Grated truffle parmesan cheese P290.00

  3. Black truffle in extra virgin olive oil P615.00

  4. Cirio black truffle extra virgin olive oil or Trufaroma white truffle oil from Santi’s P695.00

  5. Badia truffle salt from Lander’s P299.75

  6. Truffle gouda cheese from Santi’s about P300.00/ 100 grams

Easy truffle pasta

Ingredients
  

  • 2 cloves garlic
  • 1 tbsp butter
  • 1/2 cup all-purpose cream
  • 2 tbsp truffle cream
  • 1 tbsp truffle oil
  • salt and pepper to taste
  • parmesan cheese
  • 500 grams fresh fettuccine pasta (or your pasta of choice0

Directions
 

  •  Sauté garlic in butter, add mushrooms, all-purpose cream, truffle cream.
  • Drizzle with truffle oil.
  • Season with salt + pepper (I used truffle salt).
  • Top with freshly grated parmesan cheese.
  • Serve while warm.

Classic carbonara with truffle cream

Ingredients
  

  • 2 tbsp truffle flavored olive oil
  • 3-4 tbsp fresh-grated parmesan cheese
  • 3 large eggs
  • 2 cloves garlic
  • 2/3 cup bacon (or pancetta or guancale)
  • 500 grams cooked pasta of choice
  • 1 tbsp truffle cream
  • 1 tbsp truffle butter

Directions
 

  • In a large pan, add the oil and bacon until bacon is cooked, stirring often so bacon doesn’t burn.
  • Add chopped garlic
  • While pasta is cooking, in a small bowl beat the 3 eggs, then add the parmesan and mix very well.
  • When the pasta is cooked turn the heat back on the pan (to medium high), add the drained pasta, toss together to combine well for about 20-30 seconds.
  • Remove the pan from the heat add the egg mixture, constantly tossing together. Add a tablespoon or two of pasta water to make sure it is very creamy and continue to toss until well blended.
  • Top with parmesan cheese
  • Serve immediately.

Ingredients
  

  • Boxed mac and cheese
  • 1 tbsp truffle cream
  • 3 slices of truffle gouda cheese

Directions
 

  •  Cook mac and cheese as instructed in the box.
  •  Add truffle cream and truffle gouda.
  • Serve immediately.
